Bai Mu Dan, neboli Bílá pivoňka, je často považován za druhý nejvyšší stupeň bílého čaje (po Stříbrných jehlách) a tradičně se vyráběl v severní provincii Fujian v Číně. Pochází z horních dvou lístků a pupenu čajového keře, které lze sušit ve stínu a/nebo lehce opékat. To dává Bílé pivoňce světlou barvu nálevu a jemnou, oříškovou vůni. Komplexní chuť je pražená, lehce sladká a krémová, s čistým dozvukem.
