Il Bai Mu Dan, o Peonia Bianca, è spesso considerato il secondo grado più alto di tè bianco (dopo l'Ago d'Argento) ed era tradizionalmente prodotto nella provincia settentrionale del Fujian in Cina. Proviene dalle due foglie superiori e dal germoglio del cespuglio di tè, che possono essere essiccati all'ombra e/o leggermente cotti. Questo conferisce alla Peonia Bianca un colore chiaro in tazza e un aroma delicato e nocciolato. Il sapore complesso è tostato, leggermente dolce e cremoso, con un retrogusto pulito.
