白牡丹（Bai Mu Dan）は、しばしば白茶の中で（銀針に次ぐ）2番目に高い等級と見なされ、伝統的に中国福建省北部で生産されていました。茶の木の上部2枚の葉と芽から作られ、日陰干しや軽い火入れが施されることがあります。これにより、白牡丹は淡い色の水色と繊細でナッツのような香りを持ちます。複雑な風味は、香ばしく、ほんのり甘く、クリーミーで、後味はすっきりしています。
Pouring this Bai Mu Dan, the liquor is a clear pale gold and the aroma immediately takes me back to a quiet Fujian afternoon. The leaves are beautifully whole with those silvery buds mixed in, and the taste is smooth and mellow with no bitterness even after a few minutes in the cup.
The liquor brews a pale gold that’s almost translucent, and the taste is so delicately sweet it’s like sipping fresh hay and honey at once. I’ve had Silver Needle before, but this white peony has a bit more body to it, which I actually prefer for an afternoon cup.
Opened the bag and the dried silvery buds and leaves smell so clean and fresh. The liquor is smooth and mellow, exactly what I hoped a White Peony would be, especially since it's from the northern Fujian region. Definitely my new go-to after Silver Needle.
