The traditional tea of the Japanese tea ceremony. Our matcha is made from tender green leaves known as Tencha harvested in early spring in Katsura, Gifu Prefecture. Brilliant green in color, matcha has a rich, slightly sweet vegetal flavor and aroma.
The bright green color after whisking is exactly what you'd expect from a proper ceremony-grade matcha, and it's remarkably smooth with zero bitterness. I've been drinking it every morning for a week now and the early spring harvest from Gifu really comes through in the clean, vegetal finish.
Whisked it up this morning and the texture is so smooth with barely any lumps, exactly what I hoped for from a Tencha harvest. The bright green shade makes my latte look almost too pretty to drink, but the taste is gently grassy and not bitter at all.
